Crispy Herbed Roasted Fingerling Potatoes with Whipped feta garlic dip

Ingredients:

• 1.5 lbs fingerling potatoes, halved lengthwise

• 2 tbsp salt (for boiling water)

• 3 tbsp olive oil

• 2 tsp garlic powder

• 1 tsp onion powder

• 1 tsp smoked paprika

• 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

• 1 tsp fresh rosemary, finely chopped (or ½ tsp dried rosemary)

• ½ tsp dried oregano

• Salt and freshly ground black pepper, to taste

• 2 tbsp grated Parmesan cheese (optional)

• Fresh parsley, chopped (for garnish)

Instructions:

1. Boil the potatoes:

• Bring a large pot of water to a boil and add 2 tbsp of salt.

• Add the halved fingerling potatoes and parboil for 7-8 minutes, or until they are just tender but not fully cooked.

• Drain and let the potatoes dry for 5 minutes. Drying helps achieve maximum crispiness when roasting.

2. Season the potatoes:

• Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.

• In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, thyme, rosemary, oregano, salt, and pepper.

• Add the parboiled potatoes to the bowl and toss to coat evenly.

3. Roast the potatoes:

• Spread the potatoes cut-side down on the prepared baking sheet in a single layer.

• Roast for 20-25 minutes, flipping halfway through, until golden brown and crispy on the edges.

4. Optional Parmesan topping:

• During the last 5 minutes of roasting, sprinkle grated Parmesan cheese over the potatoes.

5. Garnish and serve:

• Remove from the oven and garnish with freshly chopped parsley. Serve immediately.

Parboiling softens the potatoes inside while roasting makes the outside perfectly crispy.

Whipped Garlic Feta Dip

Servings: 4

Prep Time: 10 minutes

Ingredients:

  8 oz (225g) feta cheese, crumbled (use a block of feta for the best texture)

 3 tbsp plain Greek yogurt (or sour cream for a creamier taste)

 2 tbsp olive oil, plus extra for drizzling

1 clove garlic, finely minced or grated (use more if you prefer a stronger garlic flavor)

1 tsp lemon juice (freshly squeezed

1 tsp honey (optional, to balance the flavors)

1-2 tbsp water or milk (to adjust consistency)

 ½ tsp dried oregano

Freshly ground black pepper, to taste

 Garnish: chopped fresh parsley, dill, or a sprinkle of red pepper flakes

Instructions:

1.  Blend the base:

In a food processor or blender, combine the feta cheese, Greek yogurt, olive oil, garlic, lemon juice, and honey (if using). Blend until smooth and creamy.             

2. Adjust consistency:

If the dip is too thick, add 1-2 tbsp of water or milk, blending again until it reaches your desired consistency.

3. Season and taste:

Add oregano and freshly ground black pepper. Blend briefly to combine. Adjust seasoning if needed.

  4. Garnish and serve:

 Transfer the dip to a serving bowl. Drizzle with olive oil and garnish with parsley, dill, or red pepper flakes.

This creamy, tangy dip pairs perfectly with the crispy roasted fingerling potatoes and can also double as a spread for bread or vegetables!
