The dilemma of what to do with leftovers is as old as cooking itself. With a bit of creativity, leftovers can be transformed into entirely new and exciting dishes. Rice can be revived as a main component in a spicy fried rice dish, complete with eggs, peas, and any extra protein on hand. Lastly, don’t overlook the humble sandwich – almost any leftover protein can be given new life between two slices of bread with the right condiments and fresh toppings. With these ideas, leftovers will never be boring again, and you’ll reduce food waste while enjoying delicious, reinvented meals. If you have leftover grilled chicken (like I did last week) chop it up and incorporate it into a stir-fry with fresh veggies or turn it into white chicken chili.
