Chocolate Cherry Brownies

Cherry season is in full swing adding cherries to your brownie recipes is another great way to use this delicious seasonal fruit.

Chocolate Cherry Brownies

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 3/4 cup Dutch process cocoa powder
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1/2 cup all-purpose flour
  • 1 cup fresh cherries, pitted and halved

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease an 8×8 or 9×9 inch baking pan with non-stick cooking spray or butter.
  2. In a large mixing bowl, whisk together the melted butter, granulated sugar, Dutch process cocoa powder, and salt until smooth.
  3. Add the eggs to the mixing bowl, one at a time, whisking well after each addition.
  4. Add the flour to the mixing bowl and stir until the batter is smooth and well-combined.
  5. Fold in the fresh cherries, reserving a handful for topping the brownies.
  6. Pour the batter into the prepared baking pan and spread it out evenly.
  7. Scatter the reserved cherries on top of the brownie batter.
  8. Bake the brownies for 25-30 minutes, or until a toothpick inserted into the center of the brownies comes out with a few moist crumbs attached.
  9. Remove the brownies from the oven and let them cool completely in the baking pan.
  10. Once the brownies have cooled, carefully remove them from the baking pan and cut them into squares.
  11. Serve the brownies and enjoy!
