Chocolate Cherry Brownies
Ingredients:
- 1/2 cup (1 stick) unsalted butter, melted and cooled
- 1 cup granulated sugar
- 3/4 cup Dutch process cocoa powder
- 1/2 teaspoon salt
- 2 large eggs, room temperature
- 1/2 cup all-purpose flour
- 1 cup fresh cherries, pitted and halved
Instructions:
- Preheat your oven to 350°F (180°C). Grease an 8×8 or 9×9 inch baking pan with non-stick cooking spray or butter.
- In a large mixing bowl, whisk together the melted butter, granulated sugar, Dutch process cocoa powder, and salt until smooth.
- Add the eggs to the mixing bowl, one at a time, whisking well after each addition.
- Add the flour to the mixing bowl and stir until the batter is smooth and well-combined.
- Fold in the fresh cherries, reserving a handful for topping the brownies.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Scatter the reserved cherries on top of the brownie batter.
- Bake the brownies for 25-30 minutes, or until a toothpick inserted into the center of the brownies comes out with a few moist crumbs attached.
- Remove the brownies from the oven and let them cool completely in the baking pan.
- Once the brownies have cooled, carefully remove them from the baking pan and cut them into squares.
- Serve the brownies and enjoy!
